I've found the culprit for all the headaches and stalling. I disabled all the USB related kexts and only used SSDT-UIAC.aml as @kidooe suggested in and I'm doing a clean install of macOS Taco! USB ports work just fine I'm using MacPro7,1 SMBIOS with the updated OC and the kexts from @lorys89 post without any beta boot args. When booting without weg I got the Apple logo and progress bar with the mouse cursor so I thought well it's booted. I noticed the HDD activity light on my case was on "busy". I have a HDD formatted as exfat that causes issues with Disk Utility taking its time to load the disks.
