There's a post at reddit that mentions add-on PCIe cards from Sonnet for MacPro. If you look at their web site, you'll only see 10G cards these days but they used to offer 1G cards too:

https://www.sonnettech.com/product/computercards/index.html

https://www.sonnettech.com/product/legacyproducts/index.html

Products compatible with High Sierra are listed here and you'll find 3 x 1GE cards in the list. They can be purchased online, off well-known auctions sites for instance.

Another post at reddit mentions other cards such as Intel I210-T1 Network Adapter E0X95AA for instance. Available online too and off same kind of places.

Recently I got a used Intel PRO 1000 PT Dual Port Adapter.

It works OOB without any patch or extra kexts.

It is supported in /System/Library/Extensions/IONetworkingFamily.kext/Contents/PlugIns/AppleIntel8254XEthernet.kext

It matches 0x10538086
