RAID on Mac OS X is handled by itself but only in the supported chipsets by software, there are PCI card by 3th parties but they only have Drivers for PPC macs. So onboard RAID chipsets like the nVidia, VIA, Promise, Highpoint or Silicon Image are not supported. You'll have any type of funkys problems from warm boot problems to royally screw up on any nforce board on any os.
