OS X does what's called "prebinding" where it throws the parts of a program together should they get separated. It isn't defragmenting, but it's pretty close. With that being said, OS X doesn't need defragmented nearly as often as Windows does (2 per year on Mac).

I read somewhere that mac os X can defragment on the fly files that are smaller than 30 MB

 

there was test that show there is no need do make defragmentation on the mac
