ATI cards have always been stronger in OpenGL than nVidia cards anyways, which is what OS X uses for hardware acceleration. Add that to the fact that the current gen of ATI cards are a better value and faster than their nVidia counterparts, and ATI makes the most sense right now. So something like one of the HD4850 cards would do nicely. I am just not 100% sure about OS X compatibility, so it might be good to do some research. (only VESA) 3870 is the best ATI card to work at the moment, for OS X it also gives the best OpenGL scores of any single card. So for windows and games, 8800GT is better, for Mac OS X Core Image, 3870 is the fastest. But both are good cards, and there isn't a huge difference.
