They are the Apple symbols for different keys... Those cryptic signs in your menus are trying to show you the keyboard shortcuts. For examples, the top two: (cloverleaf)N is the shortcut for a new finder window. On a PC keyboard this would be Alt-N by default. (Up Arrow)(cloverleaf)N is the shorcut for a new folder. Again, this would be Shift-Alt-N by default. You can find keys to these symbols on the web, like this Apple page on Symbols for Special Keys which can help you learn "Apple-Speak". Also, if you want to change the shortcut keys (for example make F5 a page refresh in Safari...) go to the System Preferences >> Keyboard and Mouse >> and select the Keyboard Shortcuts tab. Here you can easily change system shortcuts, and at the bottom, you can define specific shortcuts for any application menu item.
