If I was you I would look into a more recent Snow Leopard disc than trying to get Leopard running. If you find newer software, you've got a better chance that something may have been improved or fixed, whereas with the old stuff its exactly that; old. And take a look at building your own disc so that you can add what fixes you need for your hardware instead of trying to find a disc with the right magic combination. Might make it a little easier on yourself.

You've pretty much answered it yourself with the no AHCI, try using a different version

Contrary to popular belief/folklore AHCI mode is not required for installing OS X on a PC.

The only thing that matters is using the right drivers - if you can't set your SATA controller to AHCI mode and you're using a hacked DVD that doesn't have the right drivers then you just have to try another one until you get lucky.

If you're trying to install retail using a boot CD, all you have to do is change the drivers on the boot CD, this is much easier.

There are drivers for most popular motherboard SATA controllers in both AHCI mode and non-AHCI mode. Use google and the forum search to find them.

For Intel ICHx in non-AHCI mode the driver is called AppleIntelPIIATA.kext.
