System Preferences > Privacy and Security > Allow Easy Updater to Full Disk Access, also allow Terminal. Also add Easy Updater to Privacy and Security > App Management then try again.

Thanks @Xantra X and @Nmano and check your SIP, if need it  lately im used without disable SIP, only 03080000 its enough for Opencore.

I checked csr-active-config=03080000

Hi nmano. I had the same problem. Sometimes the sip remains active, even if you have csr-active-config=03080000. I think it remains written in nvram. I even restarted nvram and nothing. I tried to use MyKextinstaller and it showed csr-active 000000000. Hackingtool did the same. How I resolved this? I booted in recovery mod and on terminal I wrote this command: csrutil disable and rebooted. I cannot explain this, but it was the only way to resolve it.

HI my friends, sometimes the original OSX Updater works fine with SIP disabled, and in other situations version 3 works better.

I created both to make things easier, and yesterday I tested both of them, and with the Lenovo T14 and Clover everything worked perfectly.

My Desktop works fine too. I hope you can get it working too, or if possible, post a screenshot of the issue.
