I haven't hackintoshed since 2018 and would like to try again. Here are the technical specs of authentic late-2010s desktop PC:

CPU : Intel Core i7-860 (Lynnfield)

Motherboard : Gigabyte GA-P55A-UD4 (LGA 1156, Rev. 1.0)

Memory : Kingston HyperX Blu 4 GB (DDR3, Non-ECC)

Storage : Intel X25-M 80 GB (SATAII)

Storage : Samsung Spinpoint F3 500 (SATAII)

Video Card : PowerColor Radeon HD 6970 2GB (Cayman)

Audio Codec : Realtek ALC889

Ethernet : Realtek RTL8111E

 

NOTES:

This motherboard has no support for UEFI BIOS or GPT disks. GPT disks will freeze the computer on boot.

Your graphic card Caiman was never supported. Otherwise I see no problem from 10.6.8 up to 10.12.6.

ALC889 can be supported by VoodooHDA. (AppleALC is not only way in the hackintosh world)

According to this list, this GPU is on the list of initial supported graphics cards:

It's based on Terascale 3. Codename of the chip is from the Cayman series, specifically Cayman XT.

UPDATE1: I managed to get OpenCore 0.8.8 to get into the Boot Menu, and now I am facing the OCB: LoadImage Failed - Unsupported error after selecting my external partition. I have attached both my config.plist and the latest log file. I have no idea what's wrong. i've tried googling after search after search for solutions, and none of the suggestions from other users for that error have worked.

Okay. I tried to use the online installer method and that one seems to give me an IOConsoleUsers: gIOScreenLockState 3, hs 0, bs 0, now 0, am 0x0 error. I spent half a day trying to figure out a solution to no avail, so I decided to temporarily give up my attempts, recollect myself and maybe try Clover (ew) or just get a real old Mac device. Seems like nobody's got an answer for me either, which further makes me lose hope to an otherwise great legacy system.

Cayman has device-id 0x6718 or 0x6719 which are present in 10.11.6 kexts. You CPU is supported too.

But users said that the graphics is glitchy or not working at all. 

You may try to install a system which you have in VESA graphics mode but I can't help you with opencore. Welcome to Clover!
