Upgraded Yosemite to Catalina but forgot it was not SSD

Funny thing is that the install said nothing about it and formatted the HDD to apfs for 10.15.

 

Open core will not see a HDD formatted to apfs? I did not think that an HDD was allowed but diskutility finds no problem with it

As already mentioned APFS on conventional disks should be okay albeit being incredibly slow and the APFS driver is built-in within OpenCore.
In your config.plist, under UEFI -> APFS, set enableJumpStart to true if it isn't already

Check UEFI>APFS>MinDate and MinValue, and try setting "-1" (or Catalina-compatible values).

For security reasons, OpenCore defaults to aggressively restrict what APFS driver is allowed to load.
