When we switched from Donks darwin.iso method to Albert's unlocker method in Workstation 7, Donk posted a vmx parameter update to allow OS X guestOS's created using his darwin.iso to work under Albert's Unlocker, I assume the situation is the same for ESX, I will have a dig and see if I can find the relevant post, in the meantime I have attached a working ESXi 5 guest Snow configuration file so you can compare and amend as required.
