Extensions are drivers. They connect the operating system (Mac OS X) to the hardware like your SATA controller, your graphics card, your mouse and keyboard etc. Chances are, your hackintosh has modified extensions (drivers) on it to allow it to communicate with non-apple hardware. If you replace the extensions on your hackintosh with vanilla ones which are not designed to work with your computer, Mac OS X will have no clue how to operate with the hardware, leaving you with an inoperable system. Look up boot-132 for more info on stock/vanilla systems.
