So as the title says, which is better to install OSX86 on? The GA-EX58-UD5, or the ASUS P6T Deluxe?

I've done my share of research on these forums... with links below to prove it :(

I was just wondering this myself. I am getting ready to give Snow a shot on my P6T Deluxe as well. I did a GA-p35-DS3L and a GA-EP45-UD3P so far So I was thinking why not a I Core 920 for some more headaches

I don't have any experience with the ASUS board, but I do have experience with the Gigabyte one (GA-EX58-UD5)

and from that experiance I can tell you hands down I think it's the best board for a Mac Pro clone. I have been running my "Mac Pro" for a few months, never shut it off, always let it sleep and EVERYTHING is working as it is supposed to I even use my iMac 27" screen for a display with it (using an Apple 120 GT card in it with miniDisplay port).

Using two topics on Insanely Mac, I have EVERYTHING working with only two kext files RealtekR1000SL.kext and Fakesmc.kext. Along with bootloader, smbios.plist and com.apple.boot.plist and a DSDT.aml

I think you will find a lot more support for the gigabyte boards than any other board to.

use the following two guides for the easiest, most trouble free install with EVERYTHING working as it should with minimal files.

Kakewalk: Minimal effort install (EP45, EX58, P55, G41)

GA-EX58 and GA-X58A DSDT native power management modifications, lower CPU temperatures, turbo plus one clock ratio, sleep, etcetera

a

I concur 100% with Swhay above. I selected my hardware after extensive research on Mac Pro compatible components since Snow Leopard would be my main system, not an auxiliary to Windows or Linux.

I also based my build decision on available software installation support. The Kakewalk method is based on the AsereBLN bootloader refinement of Chameleon. It does not get easier than this, nor more futureproof for SL updates. The fewer KEXTS required, the better. An exacting DSDT.aml becomes not just necessary, but critical for full functioning hardware, and dOOd's thread provides excellent support for Gigabyte x58 boards.
