So I have Windows Vista runing off my C drive. I have a completely seperate and open HD (E drive). Does it make the most sense to just install on the empty drive (E) and run everything off that?

If so, will that allow me an easy double boot? I don't know much about getting in a messing with the code so I am looking for the clearest and cleanest way to get OSX86 up and running. I dont want to lock myself out of Vista.

Any ideas for the best way to set up for the easiest double boot?

I also have an external hard drive (Lacie d2 500GB eSATA/Firwire 800/400 and USB2. Should I just install on this drive? I feel the safest doing this BUT will that make the system very very slow?

I'd advise you installed on the internal drive, it would be faster and more stable. Just boot from your installation disc, and format that drive according. Afterwards, you computer will restart into Vista, where you can download EasyBCD to configure Vista's Bootloader to give you the option to boot OS X
