Unlocking is not the same thing as jailbreaking.

 

You need to jailbreak first to unlock. Jailbreaking is making the files on the iPhone accessible, and unlocking is to make the iPhone work with any carrier. Why you want to do is just jailbreak. You can do this by following my guide, the second link at http://www.berzerkerweb.com/jbul

To answer your first question:

 

unlocking = carrier freedom (with another SIM card) I believe you want is a JAILBROKEN phone (one that you can install 3rd party apps on.

 

Your best bet is just do the restore update (to 1.1.4 as of today) and Jailbreak using ZipHone.

 

It will take you about 3 minutes. (and it will put Installer on it for you)
