It seems like the issue was something that I missed entirely - I've left my Intel Optane memory in the system and even though it was uninstalled and disabled from the BIOS, it was preventing macOS to boot. After I removed the Optane it worked perfectly!! Even my old EFI's worked! Got everything working on the Hackintosh!
