I have the same mobo (msi k8t master2 far) with dual opteron 244s and its working except for NIC as mentioned and the sound I get only one channel. The interesting part is OSX reports only a single core but it says Hyperthreading is enable (which it obviously has wrong). Opening the activity monitor does indeed show the CPU load for 2 processors. I know you said it was only showing 1 in one of the screens, but I'm not sure if you got the different reporting in different screens like the above people...
