What format should I create a partition in if I want to boot MAC OS X?

Fat 32

NFTS

or other?

Just leave it unformatted.

 

Boot your OS X install media and use Apple Disk Utility to format your partition to HFS+ Journaled (non-case sensitive) before starting the installation.
