You create a new disk image from the DVD (rip it to a DMG), and remove all un-necessary components such as printer drivers, xcode and X11. This brings the size of the image down to around 4GB. This can then be burned to a DVD and used normally. I had to do it for the same reason. If you need the extras, just copy them onto a flash drive and sort that post install.

Much easier though, if you have access to another Mac, is to start the one you want to install Leopard to in firewire target disk mode (hold down "T" after the chime, it will start up with a bouncing firewire icon, then connect it with a 6 pin to 6 pin FW400 cable to the other Mac) and install from the other machine. Just choose the hard disk on the target Mac when asked where to install Leopard. We used to do this on quicksilver dual G4s that didnt quite come up to the 867MHz processor speed requirement of Leopard.
