Sure you can let GRUB start an OS that is installed on a harddrive using the GPT, but you can't install GRUB on a GPT harddrive. You must use MBR to do so. I already tested installing GRUB on a GPT harddrive, it failed. Also, I don't know how GRUB handles Apple-EFI. @Tralce: Take a look at rEFIt.
