Synaesthesia
Best value or best performance? I would say best value is a 945G based motherboard. Best performance is the Gigabyte GA-G33M-DS2R or Asus P5K-VM, as you can really overclock a lot one of them and good RAM. For a balanced choice, I recommend a Gigabyte G31 based motherboard. There's a good list of compatible motherboards here at the OSx86 wiki - 10.5.1 HCL
fatshitcat
I had no problem with my ASRock Conroe 1333-D667. Not a big brand, but you know what? It just works.
Zaap
I built a system with the Intel BOXDG31PR (mATX) and found it to be pretty perfect for Hackintosh. Nice and cheap at $70. I think Intel plays it really safe with their hardware, so there's nothing flashy, cutting edge, or overclocked to the bleeding edge speedy, but rather safe, stable, and nothing onboard that throws OSX for a loop, or requires any patch & pray to get working.
