You want something as close as possible to the actual intel mac hardware. Right now a 945G mobo with a SSE3 intel chip would probably be the way to go. Some boards have integrated GMA9xx video which supports Quartz Extreme from the get go. The Asus p5ld2-vm is a good mATX board with everything you need built in. I've had very good results with only a patch for the audio needed.

Check around. I think the best is:

Intel 945gntlkr - motherboard $125 pricewatch ($117 on ebay)

(everything works - even firewire + built in and FULLY working video)

Any good pentium 775 socket chip - (dual core preference) 920 - $260

Pioneer DVD (because that is what apple uses) $40

Your choice on SATA HD and Memory

From my expirience I would say:

MoBo: ASUS P4P800-E deluxe Works with 10.4.3 and 10.4.4

CPU: Any good Socket 478 CPU preferably w/ SSE3

Graphics Card: ATI Radeon 9550 Requires SMALL amount of kext editing

DVD Drive: Pioneer DVD-RW DVR-109

RAM: 512MB and up

Sizes of Hardisks are up to you!

Does the 9550 let your monitor enter standby mode?

Mine doesn't under 10.4.3
