I, like many users with notebook hackintoshes have many custom patched kexts and even a few scripts that we need to run to get our system working that aren't present in the main post-install utilities because they're custom and can't be. Which program(s) are used to make this kind of a macpoison-like program?

PackageMaker. There are tons of guides on how to use it.
