what is the difference between Darwin X86 and PC-EFI v8?

OS X comes with its own Darwin bootloader, which can only be used on EFI hardware. Since off-the-shelf PC hardware uses a BIOS, not EFI, you need an EFI emulator in your bootloader. That's what PC_EFI does, and is always required as far as I know.

Strictly literary both are darwin bootloaders. Darwin boots the darwin kernel (aka OS X' kernel). For OSX86 (hackintoshes) there are two versions, one without (usually just called darwin bootloader) the modifications that passes some information to the kernel the apples efi usually would have set and one with (there are many versions but most popular and with most features is the so called PC_EFI8 from netkas).
