I had a similar problem. The OS would hang on the grey boot screen after I edited the .plist file. The first thing I tried was booting from the OS X DVD and repairing permissions through Disk Utility; that fixed the problem. Insert your OS X DVD, Restart and Hold Option, Select the OS X DVD, select your Language and Click the Next Arrow, select Utilities > Disk Utility from the Menu Bar, choose your OS X partition and click Repair Disk Permissions (may as well use Repair Disk too). Restart your Mac and it should boot properly. Or at least that's what worked for me.

Also you can delete the 'Environmental Variables' from the .plist file by using the following command in Terminal:

sudo defaults delete /System/Library/LaunchDaemons/com.apple.WindowServer 'EnvironmentVariables'
