dual boot-make leopard default

i am talking about the apple boot menu, it had vista as the defaulted OS to boot from. how to i make Leopard the defaulted OS?

Apple uses "Start Up Disk" in the System Preferences but that doesnt work since it uses the EFI that we are lacking. And it requires a GUID partition table. And they use the option key when booting to select a partition to boo from.
