I used the OpenCore Coffeelake guide (https://dortania.github.io/OpenCore-Install-Guide/config.plist/coffee-lake.html) to construct the config.plist file attached to this post and I thought I would share.  My CPU is a Core i5-8600, but other Coffeelake CPUs will likely work as well.

Audio and networking are working fine, but waking from Sleep is a bit hit-and-miss.  If I ever solve this I will post back here.

Don't forget to use GenSMBIOS to generate your own serial number etc, and paste these into file I provided - search the file for FILL ME IN to locate the entries you need to change or see: https://dortania.github.io/OpenCore-Install-Guide/config.plist/coffee-lake.html#platforminfo for details.  You will also need some kexts and EFI drivers.  These are referenced in the attached file, or you can consult the above guide.

Finally, run the 'sanity checker' on your finished config.plist here: https://opencore.slowgeek.com/, and fix any issues it reports.

Good luck and happy hackintoshing.
