Ok, I fixed this on my own.  I want to post the solution in case anyone else is having a similar issue.

 

1. I edited config.plist in /EFI/clover/ and in that file under <key>Graphics</key> Intel was set to true.  I changed that to false as I have an nVidia GTX 770 and no onboard video on my GA-P55A-UD3.

2. In Clover boot options I entered in nvda_drv=1 and removed nv_disable=1

 

This fixed the issue with my second monitor not working.  Both monitors work fine and are using the latest nVidia web drivers and I'm running El Capitan.  SCORE!

 

Now to fix my funky USB keyboard issue.

 

Hope this helps someone in a similar boat.
