So which version (ISO/DMG) should I download for use on ESXi ?

Go and buy a copy of Lion or Snow Leopard from Apple.

I have had no success with booting from dmg, use the dmg to create a bootable USB stick, plenty of guidence either within InsanelyMac or tonymacx86, or buy the Lion USB stick from Apple, I did! Then you can create your guestOS and either mount the USB stick in your ESXi box, or as I did mount it on your vSphere client machine. You will end up at the shell command, but if your USB stick is mounted in to the VM, then just type boot at the shell prompt > and all should progress.

Good luck,

MSoK!

P.S. I have created a USB stick from the App Store downloaded Lion InstallESD.dmg using instructions from tonymacx86's blog, and installed Lion fine to both ESXi 5 and Workstation 8, I can provide instructions if required!
