What cards would be the best choices for relatively painless installation and use? I'm looking to game in OS X with it, so it must be fully working. From what I gather, the Geforce GTX2xx series works quite well, but don't cards like the Geforce GTX4xx series and Radeon 5xxx series pretty much crush it in performance?

I got an MSI GTX275 OC @ 666MHz. It works OOB with Snow Leopard and it's not power hungry in 2D (about 30W).

I'm pretty happy whith it, since it's almost as powerful as a GTX285, the most powerful GC card to run on real Macs.

Fermi are better, but it's getting expensive since you'll need a fairly good PSU (600W recommended), some cash to pay the electric bill and a well ventilated case not to overheat. Be careful: only GTX 470 and 480 are supported (GF100 chips). GTX460 and 465 will not work.

Fermi's tutorial is here:

I don't know ATI that much. Someone managed to install a HD5970 on the wiki, but it's expensive and running hot too (dual GPU). Tutorial:

The HD5870 would be a compromise. Almost as powerful as a GTX470, I think, and much cooler, but ATIs are often tricky to get working.

Thanks for the replies, guys!

I read somewhere that while the GTX 470/480 were working, it was only "barely" and that their performance was terrible. Is there any truth to this?

Radeon is option #2 for me. Beside nVidia cards typically playing nicer with OS X/Linux, I tend to like their cards better anyway. If all else fails, I can accept the GTX 285. Would have preferred something more powerful to match this build's OC'd 4Ghz Core i5, but ya gotta do what ya gotta do, right?

It would be nuts to get a GTX 285!! GTX 460,470 and 480 are confirmed working. It may be true that there are some issues with 480/470, so maybe get a 460!
