I've built many Windows/Linux based computers for many people, but I have yet to try my hand at getting OS X to run on an x86 based machine. Thanks to this website and the joy of Google, I think I have a good idea of what is required. Hopefully I can get some feedback on this build, and I'm always open to suggestions! :)

 

Proc: Intel Core 2 Quad Q8300

Mobo: Gigabyte GA-G41M-ES2L

Graphics: XFX GeForce 8400GS

RAM: PNY 2Gb DDR 800

My big concern is going with that quadcore verses an E6XXX dual core.

Gigabyte is well recommended among hackintosh users from everything that I've seen – I have their EX58-UD5 for mine. If you went for the Core i5 I'd recommend the i5 750, and for a motherboard I'd go with the GA-P55M-UD2. If there's a Microcenter near you you'd be able to save a little money on the i5 750 (probably around $20).
