You're going to need a small HFS+ formatted partition to put the boot image on because as far as I know Chameleon can only boot off an HFS+ filesystem. Might be hard to format that partion without OS X. Personally I would just use GRUB, it's way more flexible. Especially GRUB2, you can boot off almost any filesystem with that. Using its graphical mode you can make themes like Chameleon. It wouldn't surprise me if someone eventually ports the EFI stuff from PC_EFI/Chameleon into a GRUB2 plugin anyway.
