I'm about to head out to Fry's to buy the E8400 + GA-EP43-UD3P combo ($273). The processor seems good, the motherboard is a Gigabyte and seems like it'll work (although I haven't found a post with the exact combination), and I'm raring to build my hackintosh.

Any reason not to get this?

Is that the EP43 or EP45?

I know the GA-EP45-UD3P works great for Hackintosh. No idea about the EP43.

Turns out "EP43" was a misprint in the ad, it's a EP45. Bought it this morning, spent the day dismantling old rigs and finally putting the motherboard together, now realizing I didn't get a video card!

Yeah, that sucks about the video card. BUT that board is awesome for OS X. See this guide:

Even thought the second is the UD3R, the boards are very similar.
