I had a Core 2 Duo Aluminum iMac with 2.0Ghz CPU and 4GB RAM, as well as 128MB ATI video card. I normally got about 40 fps in Call of Duty 2 at 1650-1050 res with 2x aa.

 

I am upgrading to a Q6700 3.0 ghz Core 2 Quad, 8GB RAM, and 8800GT NVIDIA 512MB video card.

 

What type of performance increase will I notice in Call of Duty 2 and Halo, as well as some of the newer games like Battlefield 2142, Call of Duty 4, and Need for Speed Carbon and Colin Mcrea? Will I be able to achieve 70 or 80 fps at 16x aa, etc?

CoD2 will run like {censored} because this game has problems with 8xxx series cards. CoD4 runs fine but not with FSAA, it runs like {censored} because of {censored} optimization. NFS&BF2142 wont be smooth because it uses Cider, but CmcRae will be fine.

I use ATI 2600HD 256mb, and cod4 in high textures settings and FSAA x2 is running amazing, i need to use vsync, but very good, i don't know about frames/s but i'm not a gamer so with a normal view it's ok for me...

For what I readed in apple's web page they say that 10.6 will increase all mac performance, including grapphis... so the same computer will be more powerful muahahah :P

obviously you dont care about frames... Try to disable FSAA and you'll notice how smooth the game is :)

 

You have a 2600, and I have a 8800, and I can notice how slow it runs (60fps vs 30 fps) when enabling FSAA 2X so obviously it's really slow for you :D
