Synaesthesia
Well many P35 based motherboards work perfectly in OS X, and they are very feature-rich and overclock damn well, check the wiki HCL (hardware compatibility lists) for components that are known to work... They are priced from $90-$200 DFI Blood Iron is a good motherboard, as is the Gigabyte P35-DS3R and related Gigabyte motherboards. You can run a Quad-core pretty perfectly on a Gigabyte G31M-S2L or similar, and it's cheap, like $70!
