OpenCore w/ Gigabyte Z390 Xtreme + i9-9900k - how to edit config.plist ?

I'm building my first hackintosh with a Gigabyte Z390 Xtreme board and i9-9900k processor.
Decided to go with OpenCore since I'm starting from scratch and hoping this will be future-proof.

I've followed SnazzyLabs YouTube video and have gotten along pretty well, also comparing his steps to the Vanilla OpenCore guide online.
I'm now at the final stage before installing macOS of making my config.plist, and I'm pretty confused.

 

Starting with the ACPI section (using ProperTree to edit the config.plist), how do I edit the values? 

If I click on the links on the OpenCore guide, like this one for SSDT-PLUG, it brings me to a page of code that I don't understand, and don't know how to use that in my config.plist.

I've not found any tutorials or guides online that actually show how to edit your config.plist.

 

I'm an animator, not a coder, so I'm feeling pretty dumb at this point.

um... I am trying to setup the machine to be a hackintosh.  No way of running an app if macOS isn't even installed yet.


Anyone else have any suggestions?
