I'm about to attempt my first Hackintosh installation using the following hardware:

Gigabyte GA-G31M-ES2L motherboard (not sure which version yet)

Intel E5200 CPU w/retail heatsink

4GB Corsair DDR RAM

WD 500GB SATA drive

Sony/NEC/Optiarc SATA DVD burner

PSU (to be determined - I have several on hand)

USB mouse and keyboard

CoolerMaster mid-tower case

XFX 8600GT graphics card w/256MB DDR3 RAM

I plan on using the iPC OSx86 10.5.6 PPF5 Final Release that I downloaded as an iso and burned to DVD. I'm not sure which items I should check off on the hardware list while performing the install, especially for the motherboard. I'm a complete Mac newbie so I can honestly say I don't know what I'm doing, but I'm a fast learner.

I understand that the onboard LAN doesn't work for version 2.0 motherboards due to the chipset used for ethernet. If that's what I end up with, can anyone recommend a compatible PCI NIC?

TIA for any assistance.

Another option that works is to get the Apple USB-LAN adapter- it does occupy a USB port but it is well supported by Apple so you can avoid the issues around drivers that can plague some of the hardware options. It is fairly inexpensive and a safe choice.
