OK, keyboard works fine as far as typing. I can assign stuff to the F keys. But all the functionality that it is suppossed to have doesn't seem to be working; maybe I just need to enable it somewhere? I dunno. But volume controls aren't working, brightness, fast forward & play/pause... ?

System Prefs > Keyboard & Mouse > Keyboard.

Uncheck the "Use F1, F2 blah blah.." and that's it.

That isn't the problem. That is already unchecked And I've tried it checked/unchecked, and used the fn key... no dice...

Hmm.. is Apple Keyboard being recognised by your system? Look in System Profiler > USB > Keyboard Hub.

Here's what it looks like in mine:
