I've found various windows based applications to convert AVI/DIVX to my Apple TV. Some are really slow to convert a full movie if I use the options for 640x480 or 1024x?
Any suggestions for apps that might be faster than others?

I don't think there's a huge difference between the different programs. Except Quicktime, that's quite slow. What program do you use?
With the Perian Apple TV hack you can play AVI/DIVX files with no conversion.

Not sure about the quality, I think that depends on the TV you have, and it's upscaling capabilities.
For speed, that also depends on the resolution and how fast your machine is.
I can give you my baseline, and you can compare your number to it, maybe.
I have converted 1 hour programming in 720x480 or 720x405 avi to mp4 for the AppleTV, and it takes about 14 minutes on a Mac Pro Quad 2.66, using VisualHub.
