If you are using EFI and both vanilla kernel and kexts then you SHOULD be fine. Just remember that you still would have to back up the kexts that you modified such as graphics, audio, etc. to make it work on your system so that just in case of a kernel panic you would be able to restore and get your system back up and running. Mind you that this method is also not 100% fool proof. People with EFI and full vanilla systems are not able to use the system update from apple for 10.5.2. Point is, if you want a system that you never have to worry about updating, buy a real mac. Otherwise, updating is possible, but not as easy as just downloading the update and installing.
