Installation failing after first reboot

Hey guys,

This is my first hackintosh and I'm following the offical OpenCore Desktop Guide here.

I've gotten to the stage where the mac utilities come up, I format my SSD drive, select the drive to install it to, it counts down the progress bar for around 15 minutes, then with around 2-3 minutes left it reboots and takes me to the mac crash viewer and says that the installation has failed. Looking at the installer log, there's a few different logs that look like errors to me, but I'm not too sure. None of them match the errors shown in the "General Troubleshooting" repo in the OpenCore guide.

Parts

CPU: i7-9700k

GPU: MSI Radeon RX 5700 XT Gaming X 8GB

Motherboard: ASUS Prime Z390-A Motherboard

RAM: G.Skill Trident Z RGB 32GB (2x16GB) 3200MHz CL16 DDR4

SSD (where I'm installing it): Western Digital Black SN750 NVMe M.2 SSD 500GB

OpenCore info

OpenCore 0.5.9 DEBUG

10.15.5 macOS Catalina

The SSD was brand new, nothing installed on it previously. Formated to APFS/GUID Parition Map

Screenshots of my ACPI and Kexts folder are attached loginjet.net

All UEFI settings have been disabled/enabled as per the guide where possible

I was unable to upload my config.plist file to this post, so I've stored it here instead

Any help on where to start looking would be greatly appreciated. Even if it's just helping me find the first error that's causing this then I can troubleshoot from there. Let me know if there's anything I haven't included here that will help debug.

Thanks!
