One option would be to use AMANDA. It's a free open source tool that will backup files over the network, and create volumes to your size specifications.

 

The shortcoming is that AMANDA is designed for tapes, so you can't write directly to optical media. Instead, AMANDA contains all the files into tarballs, or the like, and you would then manuall burn the tarballs to DVDs using burning software.

 

You may be better off waiting for Leopard, which comes with Time Machine, or Time Traveller.. (I forgot what it was called).
