Dual boot Vista and OSX on a Shuttle PC

I've just built myself a nice Shuttle PC with the following specs

SX48P2 Deluxe

Q9300 Intel Proc

Radeon HD4850

2x2Gb DDR3 1600

22x Dual layer DVD Burner with Lightscribe.

 

I've currently got 3 harddrives of 250Gb each that I had sitting around. I have all 3 in a RAID5 setup. While this is not the best from a backup standpoint it does provide me with some redundancy and protection. I'd like to try my hand at turning it into a hackintosh (as far as I know no one has done it on this particular model). I would like to know if I'm better off splitting the hd's (one for each OS and maybe the last on for data?) or can I repartition what I have. If I can repartition can I keep the RAID (it is hardware RAID and should be pretty much transparent to the OS right?). If that is cool would I be able to keep NTFS on it for performance reasons? What would be the best way to go about all this?
