Hi,
I have a Apple Pro keyboard and mouse (wired USB) that came with my iMac G3:

Would this keyboard and mouse work with a normal PC hackintosh?

Think so, running my old G5 keyboard at the moment, and have a new ultra thin one on the way to me. AFAIK Apple stop you using non-Apple peripherals on Macs, but not visa-vera.

Yeah it uses a standard USB connector so no harm in trying (once I get my hackintosh of course). It would save me the hassle of buying a keyboard and mouse. And since it will be running OS X as the main OS, its better suited that it has a Apple keyboard.

Works for me too - used a range of keyboards from the old black and white Pro to the all-white keyboard that came with my eMac to the new thin aluminium wired keyboard. All work fine.
The only caveat I have is that if I want to go into the bios (or press F8 at boot for the bootloader) I have to plug in an old PS/2 keyboard. The function keys don't seem to be recognised outside of OS X on the USB keyboards.

Make sure you have legacy USB support enabled in your BIOS settings. I use a white Apple USB keyboard I can use it to enter the BIOS (F2) or the F8 thing without problem.

So glad you mentioned that, new thin Apple KB is sitting next to me and not being able to use the F keys would be a royal pain in the backside.
