I wan't to buy the following hardware:

XFX 7600 GS Silent,
Intel® Core™ 2 Duo E6750,
GigaByte P35-DS3,
Trust PSU PW-5250 LN,
LiteOn SHM-166,  
320 GB SATA2 Harddisk,
Buffalo 2 GB DDR2-800 Kit,
And a beautiful Gigabyte GZ-X1

What do you think, should this configuration work? And what drivers/extra's should I choose in the Mac OSX install? Natit? Others?

I'd suggest a e6600, because you can overclock it to be the 6750 or whatever you are getting easily
also you might wanna think about getting a q6600 since they are dirt cheap now
