If you have Photoshop, you can use the history brush. You can use it like this:
1. Make the complete picture black and white
2. Select your history brush, and start to paint

3. Paint everything you want colored, and voila

If you have lightroom you can get really cool results with "Virance" turning it way down.

You can also use the magic wand to select the shirts then exclude it, then convert the pics to B&W. it's all that simple.

You can use Channel Mixer Layer, and mask it to reveal all except shirts.

Or you can use the select -> color range and use that tool to select the color you want to keep then inverse and desaturate.

you can use quick mask mode with a feathered brush to select the shirts. i would recommend doing a copy/paste to a new layer and then desaturating the original layer.
