It is always a possibility, but keep in mind the following.
1. Will the drivers require an EFI implementation?
2. You will definitly not see any drivers (at least from ATI) until Apples releases a tower version of the Intel Macs to which you could add a new video card. ATI will not want to ruffle any of the feathers of Apple for basically releasing drivers for Hackintoshes. There would be no reason for ATI to release drivers yet since all the current Intel Macs have on board video with no ability to swap out the video card.
3. Maybe you want to take a look at the Callisto project that Omni is heading up. It fixes many of the issues of simply editing the plist to get your card to be recognized, and there are reports that when combined with other methods you can get a fully functioning ATI card with no mouse tearing, support for Quartz Extreme and Core Image, and on-the-fly resolution switching.
