I use 10.4.5 updated to 10.4.7 (through JAS update).
I avoid 10.4.8 and later because there's too much HW not functioning (like my Radeon X1600's openGL crashing after a few seconds when a game is started.) I'm also fed up with completely re-installing the whole shabang if things go wrong. It's clear that 10.4.8 and later are more suited to Core-cpu's while 10.4.5 gives largest quantity of HW recognised (like USB devices etc.) and is better suited to P4 technology. I have a P4 630 system with i915P-chipset equipped mainboard.
I also installed from 10.4.5 because if I install from 10.4.6 JAS DVD some components don't get recognised (e.g. my Logitech Pro 4000 webcam and MSI bluetooth USB adaptor). After 10.4.5 each revision DVD had less HW functioning so avoid these if you can. IMHO 10.4.3 and 10.4.5 are the best versions for non Core-systems)
Ofcourse if you do the update from a 10.4.5 to 10.4.7 remind yourself to temporarily copy the Sync-utility out from Applications (and copy it back after the update) because the one in the 10.4.7 JAS upgrade only works from updating 10.4.6 to 10.4.7!
Anyway, you can add the following apps to the list (though some are supposedly for 10.4.8 and higher; they do work on lower versions)
Shiira 1.2.2 and 2.0 (webbrowser)
TrimTheFat 0.7 (a free program like XSlimmer)
VirtueDesktops 0.54 beta 2
Disco Public Beta, v1.0.1 & 1.0.2 (CD burning app)
Toast 7
Parallels (tested following builds 1848, 1884, 1922, 1970, 3036, 3186, 3188)

ClamXAV 1.0.4 (antivirus)
Onyx 1.6.9 (cleanup-util)
Clean App (1.5.1 & 2.0.3) (cleanup util)
Aqua4Itunes (iTunes GUI changer) (tried both 7.1 and 7.2 with their respective iTunes)
Itunes 7.2
QuickTime 7.1.6 (change version.plist to get it to work)
PhotoShop CS3 Beta 2 (change version.plist to get it to work) (Bridge doesn't work on 10.4.5/6/7 though)
MacTheripper 2.6.6 (DVD ripping)
HandBrake 0.7.1 (DVD Ripping)
Open Office 2.1 rc2 (Intel build 20061130)
XBench 1.3 (benchmarking)

WidgetManager v1.3.1
Widgets.prefpane 1.0

Skype 2.6.0.72 (beta) & 2.6.0.140 (audio from the webcam's MIC work fine, video doesn't not even with macam)
Macam 9.1 (the standalone program works perfectly with my logitech pro 4000)
Macam Component (works with quicktime pro but with Skype only audio works)
CyberDuck 2.7.3 (FTP)
Coloquy (IRC)
I also tested a few Games :-)
WingNuts 2 (nice 2D shooter, very cute)
Sketchfighter 4000 (amazing looking 2D shooter looks like it's drawn on paper with a marker and a pencil)
Darwinia Demo (interesting 3D game, I used this to test several OSX86 releases and Radeon X1600 drivers)
SauerBraten (3D FPS, looks okay. Used this to test video driver-releases too. Details can be find on this site)
Outnumbered (3D shoot'm up. A very simple textured 3D game. Looks nice though)
Pac The Man X (guess what this is ;-) )
Cocoa mad race (a simple 2D above view space race game. Very addictive)
Ultranium (breakout game)
I hope this is helpfull
Cheers
