just go to www.iphonenodata.com and tap disable EDGE/3G...

i already jailbreak my IPhone, so I tried on my wife's
and it works.

I know it's a little late, but a little info if you still care, for a jailbroken iPhone you can use BossPrefs... it's downloadable through Cydia if I remember correctly.
It gives toggle switches for not only Edge, but also 3G, Wifi, Bluetooth, SSH Server, and all of your mail accounts, and you can also disable Apple's "killswitch" for apps it decides aren't in the end users' "best interests".
