I will be setting up a server in the next week or so and I wanted to know what this community thought was the best server distro.

I will end up installing a gui on the server for easier administration (the server is more/less for a client)

The server is going to end up having the AMP stack, along with RoR, and some other things,as well as snort and tripwire for security.

I have been leaning to Ubuntu or Fedora. What do you guys think?

Sounds like Ubuntu is a good server distro.

CentOS or Debian.
CentOS is a clone of RHEL.
RHEL and SLES are the best server distros without any doubt. They are not free, alas.
However you can download a "trial" version of SLES for free. The only limitation is that, once the trial expires, you can no longer download updates.

Debian is a great do-it-yourself distro, that is why I advised it.
But try to convince large companies to use it on their servers instead of RHEL or SLES.
Also because with RHEL or SLES you get official support.
Also there are users here who swear that SLES is by far the easiest to configure.

Yeah. I am picking up the computer tomorrow and going to install Debian. Should I go full dvd or network install?

I don't believe you need a full DVD if you want to install a server.
